One advantage of using stitched images is that good software will undo the natural vertcals.

In other words, if you took one photograph with a wide enough lens to take this scene, it would induce vertical perspectives (converging lines.) When you are working with a grid of images – well this is how NASA or others send back pictures of faraway stuff in digital chunks that are “stitched” together.
